Chocolate Chip Cookies
*Please note that this recipe is doubled. It's the exact one we used in class.
1. Preheat oven to 350°F.
2. Use a kitchen mixer or a hand mixer to mix the following ingredients:
3. Mix the ingredients above until fluffy, with a light brown color.
4. In a separate bowl for dry ingredients, mix the following ingredients:
5. Fluff the dry ingredients together with a fork.
6. Mix the liquid ingredients and dry ingredients together in the kitchen mixer or a big bowl until a stiff dough forms. Add chocolate chips according to taste (up to 2 cups—just pour them in).
7. Cook for 12-14 minutes. Cook longer if you like them crispy, or take them out early if you like them softer.

- 2/3c butter
- 1c sugar
- 1c brown sugar
- 2 eggs
- 2t vanilla

- 2t baking soda
- 2t salt

Muddy Buddies
- ½ cup Chocolate Chips
- ½ cup Peanut Butter
- 4 ½ cups Chex cereal
- ¾ cup Powdered Sugar
1. In a microwave safe bowl, melt chocolate chips on high for 30-seconds at a time, until mostly melted.
2. Add in peanut butter and heat for an additional 15 seconds. Mix until smooth.
3. Pour cereal into large bowl.
4. Pour chocolate mixture over cereal and stir until well coated.
5. Pour cereal and chocolate mix into gallon-size bag. Pour powdered sugar into bag with cereal mixture. Tightly close the bag, and toss until cereal is well coated. Enjoy!
Healthy Oatmeal Muffins
Ingredients:
1. Preheat the oven to 400 degrees.
2. Add rolled oats and buttermilk to the Blendtec blender. Let sit for five minutes. Do NOT blend!
3. Add egg, brown sugar, and oil. Secure lid and select “batter.”
4. Once the batter cycle is done, add remaining ingredients to jar and secure lid. Press “pulse” 4-6 times until dry ingredients are barely incorporated. Do not overblend.
5. Spoon into 12 greased muffin tins. Bake for 14 minutes, or until lightly browned.
- 1 cup rolled oats
- 1 cup buttermilk
- 1 large egg
- ½ cup packed brown sugar
- ¼ cup canola oil
- 1 cup whole wheat flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp sea salt

Orange Julius
Ingredients:
Place all of the ingredients in the Blendtec. Secure blender lid. Press “Smoothie.”
- 6 ounces (3/4 cup) frozen orange juice concentrate, thawed
- 1 cup milk (whole or low fat)
- 1 cup water
- 1/4 cup + 1 tablespoon granulated white sugar
- 1 teaspoon vanilla extract
- 9 ice cubes
Place all of the ingredients in the Blendtec. Secure blender lid. Press “Smoothie.”
Personal Pizza
1 Biscuit
1 tablespoon Tomato Sauce
2T Cheese
Toppings of your choice (ideas: pepperoni, olives, ham, pineapple, bell peppers, etc.)
Instructions:
1. Pre-heat oven to 400˚F.
2. Roll out biscuit dough with a rolling pin on the counter.
3. Place on greased cookie sheet.
4. Spread tomato sauce on dough.
5. Add cheese and toppings.
6. Bake in the oven at 400˚ for 10-12 minutes…Enjoy!

2T Cheese

Disappearing Marshmallow Treats
1 triangle of crescent dough
1 Large marshmallow
1 TB melted butter
1 TB cinnamon and sugar mix
Instructions:
1. Pre-heat oven to 400˚
3. Dip the marshmallow into the butter, then in the cinnamon-sugar mixture.
3. Wrap the dough around the marshmallow, and pinch all corners closed.
4. Dip the top of the dough into the butter, then the cinnamon-sugar mixture.
5. Place on baking sheet and bake for 8 to 10 minutes.

Breakfast Omelet Bites
- 4 slices of pre-cooked bacon
- 6 eggs
- ½c diced bell pepper
- ½c shredded cheese
- 1 tomato
- ½ cup half and half
- ¼ teaspoon salt
- ¼ teaspoon black pepper
1. Preheat oven to 350°F. Lightly spray a muffin tin with nonstick cooking spray.
2. Cut bacon into 1 ½ inch long strips, and lay them out in the bottom of each muffin cup.
3. In a medium sized bowl, beat eggs, bell pepper, cheese, half and half, salt and pepper.
4. Fill each muffin cup with ¼ cup of egg mixture.
5. Bake 20-25 minutes or until eggs are set in the center. Run a knife around the edge of each cup before removing from pan.
Pineapple Mango Tropical Smoothie
1cup frozen pineapple
¾ cup frozen mangos
1 cup fruit juice
3/4 cup yogurt
3T sugar
1 cup ice
Directions:
Place all ingredients in BlendTec mixer. Secure the lid and press “smoothie.”

Homemade Fries
Ingredients:

2. Peel potatoes, and cut into 1/4 inch long slices, then 1/4 inch wide strips, so they look like French fries.
3. Line a jelly roll pan with parchment paper.
4. In a large bowl toss potatoes with olive oil to coat the fries.
5. Sprinkle with seasoned salt and paprika.
6. Spread potatoes in single layer on jelly roll pan, being sure not to overcrowd.
7. Bake for 5 minutes at 450 degrees, then turn the fries. Bake another 5 minutes, and turn. Do this two more times until potatoes have cooked for 20 minutes.
8. Let them cool for 5-10 minutes before serving.

- 1/2 Tablespoon seasoned salt
- 1/4 teaspoon paprika

Ice Cream in a Bag
Ingredients:
Instructions:
1. Combine the sugar, heavy cream, milk and vanilla extract in the sandwich sized bag and seal it tightly, making sure there is no air left inside.
2. Measure the salt and ice directly into the gallon-size bag, then place the sealed smaller bag inside as well. Seal the larger bag. Now shake the bags until the mixture hardens (about 8 minutes). Feel the small bag to determine when it's done.
3. Take the smaller bag out of the larger one, and rinse off the bag so no salt gets into your ice cream. Grab a bowl and spoon for yourself and your partner, and enjoy your ice cream!
